Our friends at Upper Ballaird Farm Co-op grow the cabbages that make the spicy disco mix that we ferment alongside our Fodder + Farm grown garlic and carrots, organic ginger and onions. This is then dehydrated after reaching the perfect umami stage of fermentedness and then extra salt and chilli added to give it an incredible zing.

We love our Kimchi salt on top of scrambled eggs, potatoes or stirred through mayo.
